Beauty surrounded the Daring Bakers this month as our host, Sawsan, of chef in disguise, challenged us to make beautiful, filled breads. Who knew breads could look as great as they taste?

Beauty may be in the eye of the beholder, but thank goodness our taste buds are blind as my “beautiful bread” wasn’t quite sure of its designation.

This month we were given the option of a couple different breads to choose from, mainly focusing on the technique of cutting and folding the sheets of dough layered with sweet (or savory) fillings to make pretty platefuls. Of course I substituted a gluten-free flour blend for the all-purpose the recipe called for, curious to see how this recipe would fare compared to yeast doughs I’ve tried so far.

I was quite surprised at how malleable the risen dough was, as each quarter easily rolled out on a sheet of wax paper into a circle about an eighth of an inch thick. They also released from their respective sheets fairly well after each was buttered, sugared, and cinnamoned, and I thought I was doing so well, even to neatening up their edges a bit before proceeding.

That’s when things got a little dicey. I’m not sure if I used too much cinnamon-sugar, separating the layers too much, or if the dough was still not malleable enough (even with the help of the xanthum gum), but my layers wanted to break rather than tuck and roll, so I sorta kluged it together the best I could, exposing the folds as was the point and giving them a milk bath before placing it into a very hot oven.

After 20 minutes and two different temperatures, the cinnamon bread came out of the oven golden brown, but not so much magically transformed–I suppose it’s not my turn for a miracle this month! A drizzle of a coconut oil-based icing (the suggested sweetened condensed milk is a lactose-bomb) and we were ready for the final test: the taste?

It tasted delicious! I went for the optional cardamom in the dough and it pairs nicely with the cinnamon filling. Even though the more demanding fold didn’t work this time (oh, I will prevail, eventually), I think this dough worked well enough that it might be this year’s King Cake dough for Fat Tuesday. Paired with a steaming mug of Earl Grey tea, this is not a bad way to start (or end!) a day.

Time for another house update!

A couple of weeks ago I was getting ready to write a downer of a post. The good news was that the appraisal came in high enough for the roof repairs, the problem came with the mention of possible structural issues. And structural issues, regardless of cost, immediately take us out of the 203(k) Streamlined race and into the full shebang of 203(k) along with the need for a HUD Consultant and, because of the change in how the funds are disbursed (i.e., no up-front draws, only periodic draws based on work completed), the very real possibility of needing to change our contractor.

Cue freakout #I’ve-lost-count.

Underwriting demanded that we have a Structural Engineer evaluate the brick pilasters on the end of the addition (under the porch and laundry) to decide if there were, in fact, structural issues to be addressed and Todd thought it worthwhile to at least have it checked out–after all, knowing the structural integrity of the house we’re trying to buy seems like a good idea, right?

Let’s just total up the inspections we’ve now had on this house we don’t even own yet:

Unfortunately, we didn’t get the news we held out hope for: the pilasters did need work and there were a few other things to work out. And the seller was still adamant that they’d gone as low as they were willing to by accepting our initial offer (which was almost 10K under their list price) and that it was already priced to sell.

Damn.

So we did the only thing we could do: we walked away.

It was a very hard email to write, but we did it. And I almost felt better just being out of the limbo we’d been in for so very long on this project.

And then, in a move worthy of any used car lot in the country, the seller countered with an offer 10K lower than we’d originally settled on.

I was flabbergasted! Some say we called their bluff, but that implies there was a bluff to call. Others contend that the structural report finally convinced them of what they were trying to offload and what they’d have to ultimately do if they wanted to sell the home to anyone. The email I received made it sound like they wanted us to have it since we obviously loved it so much (which, yes, we do, but the timing is still a touch suspect).

Grinch-like compassion or desperation aside, this changed things more than I thought it would. It doesn’t change the fact that there are structural issues, but Todd seemed to think that the 10k wiggle room would be enough to make it doable. So the next morning I called our lender and asked if we could un-withdraw our application. Luck was on our side as the cancellation request hadn’t made it to the top of the queue and we were allowed to proceed, at least through the next hurdle.

And that hurdle come in the form of what amounts to a fourth inspection, this time with a HUD Consultant (who gets paid up-front) and the contractor in tow. Thankfully, our contractor was able to work with the changed disbursement schedule and stay on the project. This was such good news as we all remember the drama of trying to find a roofer at the beginning of this project! Our HUD Consultant pointed out a few more things than the FHA appraiser did (not that it was a big surprise) and then we were back to waiting for the contractor’s bid.

Of course, nothing can go smoothly and the loan was once again in peril once they were able to dig up the city property tax records (which are not available online anywhere–county and state are, for what it’s worth–making them damn hard for a prospective buyer to research) and the increase in the monthly mortgage cost was placing our DTI (debt-to-income) ratio close to the preferred threshold, before factoring in the additional renovation costs.

Thankfully (we had a lot of moments to be thankful during this process), that was before taking into consideration the lowered purchase price, so once the contractor’s new bid came in, we could run the numbers to see if there was any point in moving forward with the HUD write-up (another bit that gets paid on delivery instead of at closing, and whose fee is based on a sliding scale depending on the renovation amount). We caught a break and the bid came in below the appraiser’s estimated cost to cure (that phrase always makes me think of a house catching a cold), even with all of the HUD Consultant’s addition, and we got the “approvable” approval from the powers that be.

We’re not in for sure, yet–we’ve still got a few weeks until closing and the official underwriting approval to receive, but we’re a lot closer and, yes, a little more hopeful than we’ve been for the past month, truth be told.

The downside to having a morning wedding means there’s no chance to sleep in at all. I’d set the alarm on my phone for 7:30 a.m. and resisted the urge to hit the snooze button. Roadie didn’t have to be up for another hour (benefits of being a low-maintenance groom) so I stumbled off to “my side” of the cottage to get into the shower.

About the only thing still  on my mind as I took my time getting ready this morning was whether we were all systems go as planned or if we were using the rain plan. Thankfully the weather had rained itself out the night before and the ground may have still been a bit soggy, but the sky was pretty and blue and before long I could see signs of movement in front of the Gathering Hall.

Probably no one is surprised that I decided to DIY my hair and makeup for the day. While I don’t claim to be expert at either, over the past couple of years I’ve gotten more and more comfortable with my makeup skills to the point where I trusted my own hand over someone else’s. My supplies are a mix of drugstore and department store, but for big events I swear by Clinique’s Redness Solutions foundation line to balance out my wonky skin-tone and reduce the effects of the flushing my skin springs on me at random times (stress, surprise, sunlight, Tuesday, you get the general idea). With a layer of primer and pressed powder beneath and above it also stays put for 12-hour stints, so I cannot recommend it more highly.

As for my hair, earlier that year I’d tried out the Curly Girl method (no sulfate- or silicone-based products, to put it simply) and was really loving the natural curls that emerged. They’re still a little unpredictable depending on weather, etc., but I figured I’d roll with whatever my hair decided to do (very much emboldened by Mrs. Armadillo tress treatment). Since the more I mess with my hair, the less I’m happy with it, a couple of combs pulling up the sides and I was good to go.

Meanwhile, the photographers had arrived early in the hopes of getting some detail shots out of the way.

Getting ready was the other time I wondered if being alone would feel lonely–nope! I’d put together a playlist of fun pop songs to listen to while I got ready and I could dance around the room or just relax, depending on what I felt like doing, and not having to talk or be “on” yet was nice, knowing that we’d be the center of attention soon enough. Unlike the day before, I woke with nary a butterfly in sight, I was calm and collected, and truly looking forward to whatever the day would bring.

But first, it might be a good idea to get dressed…

Whether for Girl’s Night Out, birthday, anniversary or New Year’s Eve, there’s nothing that carries the same feel of anticipation than heading to the local fondue restaurant for a several-hour dinner. Fondue is the ultimate communal meal–instead of everyone concentrating on their own plates, there’s a mutual point of interest about what’s in the pot, and the waiting for each item to cook (or cool down enough to bite into) invites both conversation and relaxation.

Back in the 60s, the fondue set became a standby of housewarming and wedding gifts, and with many people fascinated with kitsch and mid-century throw-backs, I think the fondue pot is making a comeback for home use. I received one a few years ago as a Christmas present, but admit that it hasn’t seen the heat of a flame very often and spends more time in it’s box that on the table.

Getting the chance to review The Fondue Bible, though, gave me the chance to dust off the fondue set and give it a place of prominence on the table for a couple of gatherings and a relaxed mid-week supper.

Because it lends itself so well to party grazing, I started off with a cheese fondue for one of our local game nights. The Edam Tarragon Fondue (p. 32) was a nice combination of the more traditional cheeses with the almost sweet tarragon, especially with the grainy mustard added. It went excellent with sausage puffs, chicken breasts, apples and carrots. As for the leftovers, those were fabulous as an impromptu quesadilla filling when melted inside of tortillas.

Another night we went for the sweet with a cocktail-inspired B-52 Chocolate Fondue (p. 198). In addition to the dark chocolate, Kahlua, Cointreau, and Irish Cream I used coconut milk thinned with a bit of lactose-free 2% in place of the heavy cream and it worked fabulously. Into this we dipped strawberries, fresh-cut pineapple chunks, and cubes of homemade (gluten free) pound cake. Some of our guests also went for the salty-sweet combo by dipping rice crackers and salty popcorn into the gooey chocolate.

With my current fondue pot I usually use sterno-style gel fuel but it tends to get way too hot for cheese and chocolate fondues. Behold, the power of the humble tea light as this is plenty to keep a couple cups of melted cheese of chocolate liquid enough for dipping without risking scorching the whole pot (the center does tend to get a little stuck, but at least that’s easy to clean up).

The gel fuel worked wonderfully for the Quick Asian Hot Pot (p. 138), though, doing an excellent job of keeping the broth (I made lamb broth since I had some lamb ribs on hand from a different meal) steaming hot for the duration of our dinner. While it looks like a lot of work, there really wasn’t much more to it than the prep for any stew or soup–the bits and pieces were just laid out prettily on a platter instead of tossed into the soup pot. And the remaining portions were tossed together on the stove to prepare soup for lunch the next day.

We didn’t dip into the oil fondues–that many forks in boiling oil makes me a little nervous, truth be told–but maybe I’ll get braver as they do look just as delectable as the book’s other options. The Fondue Bible includes 200 recipes, loads of gorgeous photographs, and plenty of pairing ideas as well as dips and sauces that could easily go with any other meal, not just your fondue fest. I have a feeling my fondue set is going to be getting much more use, now, with so much inspiration at hand!

Mixology Monday: Pomegranate Star Sour

mxmologoWhat better way to start the week than with a twist on a classic. This month’s Mixology Monday theme (hosted by Andrea of Ginhound) is Sours, that class of drinks that is simply a spirit, a sour, and sugar. Usually the sour is citrus–it’s quite effective as far as sours go–but I had the better part of a bottle of pomegranate juice cooling its heels in my fridge and while some might describe pomegranate as tart, I’d say it does a good job of sour on its own.

So what to pair with it? Since the unsweetened pomegranate juice packs some serious pucker-power, I wanted to offset it with sweet without being too obvious about it. Enter Honey Bourbon, which does a wonderful job of being sweet and smokey all at once, without overpowering anything. Plus it’s a nod to the most celebrated version of this drink: the whiskey sour; there’s something to be said for keeping tradition alive and all that.

Now, you could say the bourbon would take care of the sugar aspect as well, but a 2-ingredient cocktail isn’t my preferred method. For the sugar element I pulled another staple in our fridge: the star anise sugar syrup that does so very well in my non-alcoholic punches.

1 1/2 oz Honey Bourbon
1 oz Pomegranate Juice
3/4 oz Star Anise Simple Syrup*

Combine ingredients over ice and shake. Strain into a chilled low ball glass (or, if you really want to step it up, an actual sour glass) and garnish with a twist of lemon and a spare anise star.

I admit, I prefer my drinks sweet, but mixing up a sour reminds me of the night I drove down to the coast to here a local band play. It was a questionable decision, at best, to go to an unknown bar alone, a good hour’s drive from home. A barefoot local sent me a drink, the bartender who delivered it cautioned me that while he was harmless that maybe it was better to sit at the bar rather than the corner of the room I’d chosen for the best view of the band. Some guys on a bachelor party outing also invited me out to their condo for an after party, and while they also seemed harmless enough, I stayed through the band’s final set, nursed my amaretto sour, and made it home without any additional adventures.

*For the Star Anise Simple Syrup, make a 1:1 simple syrup and simmer a couple of star anise pods in it for at least 5 minutes. I like to leave the pods in the mixture while storing it in the fridge to make sure the flavor doesn’t dull. Goes especially well with a glass of ginger beer.
