Today’s post is going to be a bit delayed–I ended up spending all of Monday night in the kitchen making dinner, trying out this month’s ICC recipe and making 3 King Cakes for Mardi Gras.

See? My time-mismanagement is my office’s windfall.

So…. the post I had planned and roughed out for today will show up either late tonight or maybe Wednesday. (Kinda depends on how many Hurricanes we have, tonight!)

  1. We are trying to find something to make for dinner tonight that is Mardi Gras themed, but not made out of seafood, is too spicy or would blow our calorie intake off the charts! lol. Your cakes look goooooooood!

    1. Red Beans and Rice is actually not unhealthy–you could use brown rice if you wanted and use a leaner cut of meat or turkey sausage or skip the meat altogether. That and a nice salad of greens and red onion with vinaigrette would fit the bill.

      Also, there’s gumbo. Make your roux with olive oil (use slightly less than you would butter) and use chicken as your protein. Again, substitute brown rice and the spice is easily controlled by what you add.

      We’re doing Muffulettas for supper and, while processed meats and bread might not be on your ideal list for a low-cal supper you could deconstruct it a bit for your purposes: thin-sliced ham and salami, provologne cheese, lots of olive salad (that part’s relatively healthy, at least) all in a whole wheat wrap.

  2. I actually just saw those on Martha Stewart and thought they looked interesting. We usually have about 300-350 left over every night from the doctor recommended limit, lol, But on most recipes with chicken I’m noticing a shockingly large amount of mayonaise! LOL I never would have thought New Orleans food had a ton of mayo in it. When we were in Memphis we ate this Orleans Parish bread pudding, the best bread pudding I’ve ever had… but I mean, lol that is probably my whole daily cal allowance right there! LOL

    1. Oh, yeah, grew up eating LOTS of mayo on everything. BUT! (to continue with the unsolicited advice, lol) You can substitute half the mayo called for in just about any recipe (sometimes more than half) with Greek-style yogurt and lighten it up quite a bit. I did it last night with homemade tartar sauce and I think it was better than the all-mayo version.

    1. King of Anything is one of my favorite songs to sing along to in the car, Bottle it Up is a nice track, too, and Gravity is so sweet and sad it’s beautiful.

      So, yeah, I guess it’s safe to say I like her 🙂

    1. I’ve heard quite the buzz on that ring (and you would look awesome in that dress) since the video started making the rounds. I’ll bet there are lots of versions on Etsy.
