The reason people are constantly creating new spins on the old classic cocktails is because those classics have stood the test of time.

Knob Creek® Ol’ Fashioned Holiday Maple

  • Pinch of Raw Sugar
  • Orange Peel
  • 3 Dashes Bitters
  • 1 ½ parts Knob Creek® Smoked Maple Bourbon
  • 1 part Calvados Boulard® Apple Brandy

1. Drop a pinch of raw sugar, orange peel, and 3 dashes bitters into a rocks glass and muddle.

2. Add Knob Creek® Smoked Maple Bourbon and Calvados Boulard® Apple Brandy and stir with ice.

As far as the parts go, I’d go with an ounce per part, and I can’t see why they didn’t just write it that way. *shrug* The featured spirit here, the Smoked Maple Bourbon, was released last fall (2013) and appears to still be available. It certainly sounds tasty enough to hunt down!

The Oregon Trail

For the longest time I thought Oregon was more inland… somewhere more in the Idaho area, for some reason. I just couldn’t imagine it on the coast. At least I didn’t think it was an island, right?

What I *was* fairly sure of was that lots of people traveled to Oregon in the wagoneering days of the mid-1800s (back when you could die from a broken arm–way to scare kids, folks!). This knowledge came from the old computer game The Oregon Trail where you had to safely get your family from point A to point B in 200 or so days with very little money (even by the standards of the time) and a whole passel of children who liked to wander off as well as being accident-prone.

I got a refresher on this game when I found it on my cell phone. It’s been updated somewhat–more activities requiring coordination rather than just guess-work problem solving skills, but it’s still the same game I remember playing during “College for Kids” (gifted program in elementary school: one day a week we’d go to a college campus and get to take special, fun classes, like programming the triangular “turtle” of an Apple IIc to make pretty pictures on the screen).

But I digress.

Despite my earlier misconceptions, Oregon is actually on the West Coast of the US and became our 33rd state on February 14, 1859. Man, can you imagine the other states’ reactions?

“You gave Oregon statehood for Valentine’s Day, what did you get me? A lousy tax break? Harumph!”

But I digress. Again.

Let’s just get to the drink, shall we?

1/2 oz Hazelnut Liqueur
1/2 oz Apple Brandy
1 oz Cola

Combine alcohols over ice and shake briskly. Pour in the cola and swirl to chill before straining the finished drink into a chilled cocktail glass.

Turns out, in addition to having lots of breweries and wineries and growing tons of hops, potatoes, apples and pears, Oregon is big in the hazelnut world–90+% of the countries hazelnuts right in the Pacific NW! Go Oregon! So, of course, I’m thinking ‘hello, Frangelico,’ and Applejack hasn’t been used in a while. The soda ensures that tasty caramel color, which I would imagine was what that trail looked like much of the time (though probably not as tasty as this drink!). Your first sip might remind you a bit of a rich root beer float, with just a kick from the apple brandy.

Did you know that today, October 1, is  National Sake Day?

I’ve got some pear sake on the bar and decided to give it a go in the Oregon Trail, in place of the Applejack. It’s not bad! Compared the the original, it’s a bit smoother (according to my helper-taster, Todd) with an almost unctuous mouth-feel. There’s the little tang of sake at the end, making it a somewhat complex taste but definitely satisfying.

A fruited wine beverage, Sangria has as many variations as it has makers. The downside, generally speaking, is that to make good Sangria you need time. Namely, time for the fruit to mix and meld with the other ingredients. But what if you want Sangria now, and you’ve got all the parts but you’d rather drink it tonight as opposed to tomorrow? Are you doomed to a passable but not spectacular bottled version? Is there a happy medium between 8-hours and a screw-top bottle?

I think so.

In fact, my theory is that you can “fake” the steeping period by the application of gentle heat to the fruit and any other items you are adding to the wine base (because in addition to a variety of fruits and their juices, brandy, spices or even some flavored vodka could be used). In this scenario, you could then have a very flavorful Sangria in an hour or so, instead of overnight. Plus, you can make just enough for a drink or two (or a person or two) without needing to make an entire pitcher.

Red Sangria for 2

Combine in a small saucepan:

1 lime, cut into slices
2 strawberries, hulled and halved
a couple chunks of pineapple
1 Tbsp white sugar
2 Tbsp hot water
Small cinnamon stick (optional)

Bring this mix to a gentle simmer then reduce heat to low. Use a muddler or wooden spoon to gently break up the fruit. After about 10 minutes, add

1-2 oz vanilla vodka

turn off the burner and let the mixture sit for another 10-15 minutes.

Pour the fruit mix (sans cinnamon stick) into a glass jar or carafe or divide between two tall glasses. Pour in

4-6 oz. red table wine per glass

and refrigerate for 1 hour.  Serve with more fruit, if desired, and enjoy your drink!

Variation: White Sangria for 2

Substitute a handful of blueberries, raspberries and blackberries for the lemon and pineapple in the red version and skip the cinnamon stick. Use Apple Brandy instead of the vodka and a white wine for the red.

Compared to the bottled Sangria I picked up for comparison, both of my versions (actually, all four since I tried each fruit/liquor combo with each wine just out of curiosity) were less sweet than the pre-made. You could add orange juice (red) or white grape juice (white) if you wanted a fruitier, sweeter beverage or add club soda or some other fizzy drink for a bubbly version.
